Ingredients:

2 whole chicken carcasses (cut into half)
2 lt water
2 large carrots (washed, peeled, and cut into 2-3cm pieces)
3 medium-large potatoes (washed, peeled and quartered)
2 whole corn cobs (peeled, and cut into 4 cm pieces)
2 large tomatoes (washed and quartered)
1 large onion (peeled and cut into 6 pieces)
1 tbsp of peppercorns
Salt to taste




Steps:
  1. First prepare the chicken by adding to vigorously boiling water for 20-30 seconds before discarding the water. Then remove any impurities from the chicken bones.
  2. Add 2lt of water to the pot, the prepared chicken, carrots, potatoes, cut corn, tomatoes, onions and peppercorns to a large pot. Bring the water to a boil then reduce heat to low and allow to simmer for at least 2 hours.
  3. Before serving, season with salt and serve hot.
