Thai-style tofu in 10 minutes

Although tofu isn’t a traditional Thai ingredient, it is a feature in many modern Thai dishes such as Thai style curry tofu. Try this vegan-friendly recipe which is easy to make. In this recipe, creamy-smooth coconut milk is blended with a whole bunch of vegetables (including eggplants, shiitake mushrooms and carrots) as well as delicious seasonings such as garlic, onion turmeric, Thai basil, and bird’s eye chilli for a spicy kick.

Tofu in 10 minutes

Try this simple Thai tofu and vegetables:

1. In a large pan, heat the vegetable oil. Add onion, ginger, garlic and bird’s eye chilli and stir-fry over moderately high heat for 2 minutes.

2. Add the turmeric, shiitake mushrooms, eggplant and carrot and stir-fry for 3 minutes.

3. Add the tomatoes, coconut milk, tofu, water and soy sauce to the pan and simmer over moderately high heat, stirring a few times, until the vegetables are al dente, about 4 minutes. Stir chopped Thai basil into the vegetables.

4. Transfer to plates and serve hot! Best served with steamed rice.
