Adding thinly sliced kaffir lime leaves will lend it a delightful lemony aroma. Sliced cucumber, mint leaves and halved limes can also be served alongside. Every bite bursts with the taste of crunchy prawns stripped off from their heads, coated with a fiery sauce of sambal and the final citrusy note of the kaffir leaves. You could also add some “petai” (smelly beans) to this dish to give it a beautiful aroma.

Note a few additional points. The prawns when mixed with corn flour, refrigerated and fried, ensure that it is firm and not mushy or fraying on the sides. It should not be wet and bunched up while frying.
