4 Sambal Delicacies you Must Try

Sambal is an authentic chilli paste made using a variety of chilli peppers. Along with chillies ingredients such as ginger, garlic, onions, lime juice and shrimp or fish sauce are used too.

Traditionally, Sambal is made using mortar and pestle. It is either served as a condiment or cooked using various ingredients to prepare a dish. Sambal is usually eaten with rice or noodles.

While cooking at home sambal is mostly prepared fresh every single time. However it can also be stocked in an air tight container for later use.

When in Malaysia you will definitely come across sambal delicacies in most restaurants and street food vendors. It is one ingredient that is used in many dishes.

Here are the 4 sambal delicacies you must try:

Sambal satong – Sambal Satong is squid cooked in sambal paste. The dish is prepared using simple ingredients such as fresh squid, tamarind paste, belachan, and candle nuts.

Sambal ikan billis – Anchovies cooked using sambal sauce is known as sambal ikan bilis. This dish can be prepared in less than 15 minutes and needs nothing more than onions, tamarind, sambal sauce and salt and sugar for taste. Sambal ikan bilis is generally served with hard boiled eggs and rice.

Sambal kangkong – Sambal not only enhances flavours of meat but also makes a great dish when cooked with vegetables. Sambal kangkong is water spinach cooked in sambal paste. This dish again can be prepared in less than 15 minutes of timing, needing nothing more than onions, garlic cloves, sambal and kangkong or water spinach.

Sambal chicken – when compared to the above sambal preparations, cooking sambal chicken is a rather elaborate process. It is cooked using authentic Malaysian ingredients such as coconut milk, lemon grass, candle nuts and tamarind; along with onions, garlic, ginger and sambal.

Similar to the peranakan style of cooking, the chicken is first marinated with turmeric and salt and then cooked with the rest of the ingredients.
