Sambal ikan billis – Anchovies cooked using sambal sauce is known as sambal ikan bilis. This dish can be prepared in less than 15 minutes and needs nothing more than onions, tamarind, sambal sauce and salt and sugar for taste. Sambal ikan bilis is generally served with hard boiled eggs and rice.
Sambal kangkong – Sambal not only enhances flavours of meat but also makes a great dish when cooked with vegetables. Sambal kangkong is water spinach cooked in sambal paste. This dish again can be prepared in less than 15 minutes of timing, needing nothing more than onions, garlic cloves, sambal and kangkong or water spinach.
Sambal chicken – when compared to the above sambal preparations, cooking sambal chicken is a rather elaborate process. It is cooked using authentic Malaysian ingredients such as coconut milk, lemon grass, candle nuts and tamarind; along with onions, garlic, ginger and sambal.
Similar to the peranakan style of cooking, the chicken is first marinated with turmeric and salt and then cooked with the rest of the ingredients.
