The beauty of a sorbet lies in its simplicity. A frozen dessert made from sweetened water and flavouring (which typically consists fruit, fruit puree, or juice), sorbet is a famous island treat. In most places, sorbet is sold on street carts where vendors offer scoops of different sorbets as a refreshing mid-day soother. But when you cannot leave your world behind and flit off to an island in search of that simple yet perfect sorbet, you needn’t worry.
A sorbet, especially one made of coconut, is a simple dessert to make. It requires very few ingredients which are almost always available at hand. All you need is some coconut, a little water and a bowl.
Treat yourself to a delicious coconut sorbet at home with this recipe:
2 cans (13.5 ounces each) of unsweetened coconut milk
1 can (15 ounces) of cream of coconut
1 ½ cups of water
½ cup of sweetened coconut flakes
1. Blend the coconut milk and cream of coconut in blender until the mixture develops a smooth texture.
2. Transfer the mixture to a bowl and stir in water and the ½ cup of coconut flakes.
3. Chill until very cold.
4. Upon removing from cooler, process the mixture in an ice cream maker, and transfer into a container to freeze.
5. To serve, scoop into dessert bowls or empty coconut shells and garnish with the coconut flakes.
Tip: For an added touch of coconut, you can replace the water with coconut water.
