He first established himself with his restaurant Darley Street Thai in Sydney, which was opened in 1992. In 1995 he followed by opening another hit Restaurant- Sailors Thai, also in Sydney. His first restaurant to receive a Michelin Star is Nahm, in London. Nahm is the very first Thai restaurant in the world to receive this award. Following this success he opened another Nahm in Bangkok. It is this restaurant that has gained him the most recognition.
Nahm is known as the Best Asian Restaurant in The World 2014 as awarded by Restaurant Magazine. The industry publication based out of the United Kingdom also recognises Nahm as Top 13 on the list of World’s 50 Best Restaurants. An elegant 70-seater restaurant with 60 staff, Nahm caters to gourmets who have a desire to indulge in authentic Thai cuisine. An accomplished chef, author and broadcaster, David’s fascination with Thai food actually began when he was visiting Thailand in the 1980s. A Thai friend’s grandmother prepared him a meal like nothing he had ever tasted. The lady has actually learnt her skills from her mother who used to cook in the royal Thai court. It was her impressive skills which inspired David to become her apprentice, learning the balance of flavours that are unique to Thai food.
