Must-eat in Thailand – Pad Thai

Considered the national dish of Thailand, Pad Thai is perhaps one of the most popular Thai dishes.

It is one of the few dishes that embody the authenticity of Thai cooking – balancing the five fundamental flavours. A good Pad Thai is one that uses the most fresh and best ingredients available.

Over years, this national favourite has evolved into two distinct styles – the traditional and the modern variations. The traditional Pad Thai is a combination of stir-fried noodle with eggs, fish sauce, tamarind juice, bird’s eye chillies, tofu and shrimp, garnished with coarsely ground peanuts and finely chopped coriander.

The modern variations are based on the traditional formula of noodles and vegetables fried over high heat but contain different twists to bring new twists to this lively dish. A popular variant is encasing the Pad Thai in an omelette which makes it more attractive and adds a good source of protein. Vendors also mix it up by adding cockles, clams or even Chinese sausage.
