Must-eat in Vietnam – Ca Kho To

Ca Kho To is a delicious fish delicacy from the exotic Vietnam. The tender fish is slathered in salty-sweet sauce common to Southeast Asia, and smells simply brilliant.

While it’s certainly fun to get out of the kitchen for a change and sink your teeth into juicy burgers served hot at a restaurant, there’s nothing more comforting than coming home to caramelised fish in a warm clay pot. And that’s exactly what you get with Ca Kho To. The sweet, savoury goodness of the caramelised sauce on this fish-based dish is good enough to stand out on its own, but couple it with a plate of jasmine rice or sticky rice, and you’ll feel like you’re in culinary heaven.

Most restaurants serve up catfish as part of Ca Kho To, but really, any fish is ideal for this dish. The trick is to get the sauces just right, and the Vietnamese are experts when it comes to authentic curries and sauces. The taste of coconut milk and juice stands out, but that is hardly a surprise considering this dish comes from Southeast Asian cuisine. The braised fish tempts you from the word go, and its taste lingers well after your plate’s been wiped clean.

So, sample this must-eat in Vietnam – Ca Kho To.
