Ingredients* 500 grams chicken breast fillets
* 2 teaspoons coconut oil
* 2 teaspoons of squid brand fish sauce
* I onion diced
* 4 cups broccoli
* 2 cups green beans
* 2 carrots
* 2 cloves garlic
* 2 teaspoons fresh ginger
* Half a jar of Valcom yellow curry paste
* 400 mls reduced fat coconut milk
spring onion and coriander for garnish
MethodStep1. Dice onion, garlic and ginger and set aside
Step2. Dice up chicken breast fillets, broccoli, carrot, beans
Step3. Heat coconut oil in a wok. Add onion and simmer. On high heat add curry paste and cook til fragrant. Add chicken and cook through bring to boil. Slowly add coconut milk and bring to boil. Add ginger garlic and stir. Add fish sauce and stir. Add broccoli and carrot and beans. Cook on low heat until tender.
Step 4. Serve on a bed of basmati rice and garnish with spring onion and coriander.
