Delicious and nutritious!

Cuisine :


Ingredients :

TCC Coconut milk
Valcom green curry paste
Fish sauce
Brown sugar
Fresh garlic
Coconut oil
Fresh ginger
Spring onions
Basmati rice
Spring rolls w/ sweet chilli dipping sauce

Cooking Steps :

Dice vegetables.
Cook rice using absorption method
Meanwhile, stir fry half a jar of Valcom green curry paste with an extra teaspoon of garlic and ginger and 2T of coconut oil over low heat till fragrant.
Add half can of 400ml coconut milk and stir-fry for 5 mins.
Add lentils, all vegetables, remaining coconut milk, 1/2T fish sauce and 1t sugar and bring to the boil, then simmer for another 5 minutes or until veg is soft.
Serve on a bed of rice, with a sprig of coriander and spring rolls with sweet chilli sauce.
