Singaporean chili mudcrab
2 large mud crabs or sand crabs
2 table spoon of sweet chilli sauce
2 table spoon of fish sauce
2 brown onions ,roughly chopped
1 or 2 table spoon of salt
1 tablespoon of fresh ginger
3 tomatoes, chopped
1 table spoon of light soy sauce
2 garlic cloves,
1 tablespoon finely grated palm sugar
1 tablespoon vege or peanut oil
1 bunch of coriander
2 banana chillies chopped
Remove the crabs top shell in one piece and reserve for additional garnish.
Remove the grills and spongy part under the running water.
Cut the body into a quarters and used the blunt edge of a large knife to crack the large claws.
heat the oil in a work, add onion, garlic , chili, ginger and stri fry for 1 min.
Add the crab and stri fry for 1 min untill the change of the color. Add the tomatoes, light soy sauce, sweet chilli sauce, fish sauce, palm sugar, salt & water , bring them to boil. cover and simmer for 10 min and stir well once or twice.
garnish coriander and serve with steamed basmati rice ,Asian green vege and son in law eggs...
