Combine all ingredients, except chicken, until well combined. Add cubed chicken thighs and toss to combine. Chill and marinate for up to 4hrs. Thread onto skewers and chargrill over a chargrill or cook on a barbecue grill plate for 8-10 min turning often or until cooked.
Meanwhile, make salsa by combining all salsa ingredients in a bowl. Serve chicken sticks with fresh cooked jasmine rice and top with salsa. Garnish with coriander leaves and diced red chilli. Serve with sweet chilli on the side for dipping!! Yum Yum
