Sweet, sour & spicy stir fry textural delight!
1 packet of instant wheat noodles, 1 head of broccoli, 2 potato, 2 red onion, 3 green shallots, 3 beef sausage, 2 tbs sweet chilli sauce, 4 kaffir lime leaves, 1/3 C lime juice, 2 tbs Squid brand fish sauce, 2 tbs olive oil. Cucumber side: 1 medium cucumber.
Steam brocolli and potato in microwave/stove. In a saucepan, cook the noodles to packet instructions. Add half the oil to medium heat pan and fry the sausages, add the steamed potato to fry pan when sausages are 75% done to crisp up. Take off sausages and potato and set aside. Prepare lime juice and kaffir lime leaves (take out central vein and slice finely). Add onions slices and sliced shallots to pan and cook until soft. Add the broccoli to heat up. Add the noodles, potato and sausage back to pan. Add lime juice, kaffir leaves, sweet chilli sauce and fish sauce to mix. Stir to combine. Serve hot. Sprinkle with sesame seeds to serve. Cucumber side salad: slice cucumber in half length-ways (long side) then slice into strips diagonally.
