Layers of creamy coconut with a hint of Pandan
1 cup glutinous rice flour
2/3 cup tapioca flour
1&1/4 can coconut cream
3/4 cup caster sugar
1/2 - 1 tsp pandan essence
Combine flours, sugar and stir together.
Whisk in coconut cream and mix into smooth batter. Divide into two bowls. Add pandan essence to one bowl to get desired colour. Lightly grease a pudding bowl. Boil water in a pan with steamer basket and place pudding bowl in steamer basket with lid fitting on top. Once boiling, reduce heat to medium and pour in a layer of batter. Steam each layer until it is firm to the touch and solid. Add the next layer and continue to steam in layers until all the batter is used. Note* Steaming each layer takes between 10-20 minutes depending on thickness of the layer of batter. It may take up to two hours or more steaming to make this dessert. When all layers are solid and firm to touch, remove pudding dish from heat and cover with cling wrap. Let cool. Invert onto plate and store covered with cling wrap. Keep refrigerated. Consume within 2 days.
