Fresh Basa fillets steamed with Nam Jim sauce

Ingredients :

For the Name Jim
Fresh coriander roots/stems/leaves
Fresh ginger
Fresh red chillies
Fresh garlic
Zest & juice of 2 limes
Fish sauce
Sichuan peppers
Honey
2shallots finely chopped
Ground salted cashews
Apple cider vinegar

Basa fillets
Chopped lemongrass for serving
Asian greens
Spring onions

Cooking Steps :

All Nam Jim ingredients whizzed in food processor
Basa into steamer for 15/20 minutes depending on size
Electric steamer quicker than our bamboo steamer as more concentrated steam
Nam Jim spread on one side with lime juice,after 10 minutes carefully turn fish add more Nam Jim and lime juice
Chopped bok choi,pak choi & spring onion steamed above fish
Serve on hot plates
