Spicy Lamb San Choy Bau with Mango Salsa

San Choy (lettuce) – a good luck food for CNY

Ingredients :

San Choi Bau Ingredients:
400g mince lamb
2 tsp Szechuan peppercorns
2 tsp cumin seeds
2 tsp fennel seeds
2 tsp chopped garlic
2 tsp chopped ginger
1 zucchini, diced
1 carrot, diced
1 lettuce
1 tbsp soya sauce
1 tbsp sesame oil
salt & pepper to taste
Chilli & bean sprout for garnish

Mango Salsa Ingredients:
1 mango, cut into cubes
1 cucumber, cut into cubes
1 red capsicum, cut to similar size as the cucumber
1 finely chopped spring onion
1 tbsp toasted sesame seeds
2 tsp soya sauce
2 tsp sesame oil
2 tsp lemon juice
Salt & pepper to taste
Chilli for garnish

Cooking Steps :

1. Wash and prepare the lettuce leaves. Try to keep the leaves intact. Set aside.

2. Mix the all mango salsa ingredients together and add garnish.

3. Cook the mince by starting with low heat in the wok or pan to slowly toast the spices till fragrant. Turn the heat up and add cooking oil, garlic and ginger. Then, add minced lamb till brown. Then, add the diced zucchini and carrot. Add the seasoning. Continue cooking until lamb is cooked.

4. Assemble the San Choy Bau with the lettuce leaves, stir-fried minced lamb and chili & bean sprout. Serve with rice & mango salsa.
