Spicy Coconut Beef w/ Wok Fried Ginger Noodles

Quick & Easy – full of Asian Flavors

Ingredients :

! !/2 Cups diced Beef (I have used lean rump)
1 cup sliced Shiitake Mushrooms
3 baby bok choy (steamed)
4 cups Asian noodles (I have used thin egg noodles)
2 pc sliced chilli
2 tsp minced ginger
1 tsp minced garlic
1/2 cup coconut milk
4 tbsp. soy sauce
4 tbsp. grated coconut
fresh coriander
coconut oil (for sautéing )

Cooking Steps :

Pan/Wok fry the noodles in coconut oil with the minced fresh ginger till slightly crisp. Divide the noodles into serving bowls. Toss the sliced beef with soy sauce. Heat large pan / Wok till hot - add Beef , Shiitakes , minced garlic & chilli. Add coconut milk & toss well (this is a very quick process - should take literally 2 mins in a very hot pan). Spoon the wok fried Coconut Beef mixture on top of the crispy noodles. Top with shredded dried coconut. Serve with fresh coriander & steamed boy choy.
