simple chicken and garlic prawn fried rice.
x1 chicken breast
1/2 kg raw garlic marinated prawns
4 cups jasmine rice
3 tbs Lee Kum Kee soy sauce
2 tbs yeo's pure sesame oil
1 tbs squid brand fish sauce
3 garlic cloves
1 small onion
1 cup chopped spring onion
1/2 cup chopped coriander
1 small red chilli
Mince garlic in sesame oil until golden, then had diced onion.
Once sautéed golden add chicken (diced) and cooked until sealed and slightly browned. Then add the prawns and cook until curled.
Add steamed jasmine rice and fry in pan for a couple of minutes.
Add chopped small chilli, spring onion and coriander.
In another pan, scramble the eggs until firm enough then add into the mixture along with soy sauce and fish sauce.
Stir through and serve with a garnish of red chilli and coriander.
