Spicy Thai green papaya salad with sticky rice

Cuisine :

Thai

Ingredients :

Garlic
French shallots
Red birds eye chillis
Palm sugar
Shrimp paste or dried shrimps (optional)
Lime or lemon juice
*Squid brand (preferably premium) Fish Sauce
Green shredded papaya
Green beans
Cherry tomatoes or tomato wedges
Lime or lemon pieces


Cooking Steps :

Smash the first five ingredients in a mortar and pestle until formed into a paste. Mix in lime juice and fish sauce until desired sour:salty:sweet ratio is achieved. Pound or smash cherry tomatoes, green beans and lime pieces lightly and then mix together with dressing and shredded green papaya. Serve with sticky (glutinous rice) and barbeque pepper chicken or squid or marinated pork spare ribs. Can served garnished with roasted peanuts if you like.
