Chicken mince and veggie lettuce cups
1 San choy Bau sachet
500g chicken mince
1/2 red capsicum (diced)
4 spring onions (chopped)
1/2 zucchini (diced)
1 carrot (diced)
1 tbsp minced garlic
1 tbsp minced ginger
1/4 cup sweet soy
1/4 cup sweet chili sauce
1/2 cup chicken stock
Salt and pepper to season
In a large pot at high heat sauté the oil, garlic, ginger and vegetables until fragrant
Add the chicken mince and season. Once the chicken mince is sealed add the sauces, stock and sachet.
Turn to low and let simmer for 20 minutes or until chicken & veggies are cooked and sauce has cooked through.
You can add some cayenne pepper for some heat.
Serve on lettuce cups with some cooked rice noodles.
Garnish with Japanese mayo and dried shallots. Yum yum!
