Salmon with red curry and vegetables

Cuisine :

Thai

Ingredients :

Salmon
Red curry paste
Fish sauce
Lime juice
Garlic
Tinned cherry tomatoes
Coconut milk
Carrots
Capsicum
Snow peas
Spring onion
Zucchini
Brown rice
Oil
Salt & pepper

Cooking Steps :

•Cook onion & garlic until soft, add red curry paste & cook until fragrant, add fish sauce, lime juice, tomatoes & coconut milk
• slice veges thinly, toss through oil & seasoning
• place salmon in an oiled baking dish, layer vegetables on top
• pour curry around the salmon, cover with foil & cook for about 20mins or until salmon is cooked
•serve with brown rice
