Spicy heaven! Prawn broth filled with love.
1jar Laksa paste, 1 x 400ml coconut milk, 600mls Homemade prawn stock, 1chicken breast diced, 3 prawns per person peeled, 1/2 cup bean shoots, 1 small bunch glass noodles, 1 chilli, 100grams green beans sliced, 2 spring onions, angle sliced, handful of coriander, a sprig of mint each for each bowl, 2 snow peas sliced for each person , 300gms pumpkin -chopped ,1 teaspoon fish sauce, topped with love.
Fry laksa paste in a little oil, add coconut milk and simmer for 5-6mins , add diced chicken, beans,peas and cook until chicken tender. Add prawns ( as they cook quickly) pop in steamed pumpkin and fish sauce. Ready to serve once prawns have changed colour to pink. Put rehydrated noodles in serving bowls. Pour soup over and top with spring onion, coriander, mint & fresh chilli
