Poached coconut chicken salad

Poached coconut chicken salad

This salad is amazing in flavours and easy to make

Ingredients :

1/2 chicken breast
200 ml coconut milk
1/2 tbs fish sauce
1/4 tbs palm sugar
1/2 tbs lime juice
1 red chilli, julienned
1/4 red onion finely chopped
1/4 mango diced
1/4 avocado diced
1/4 cup coriander
1tbs shredded toasted coconut

Cooking Steps :

Heat the coconut milk to simmer, turn down then place the chicken in the poaching liquid, for 10 minutes or until cooked.keep the coconut milk
Shred the chicken while warm
In a mixing bowl dissolve sugar and sauce, then add lime juice and 1/4 cup of the poaching liquid.
To this add the chicken, mango, avocado, onion, chilli, coriander
Fold gently, and serve topped with shredded coconut
