Poached chicken with soy and sesame

Delicious slow cooked chicken with Asian flavours.

Ingredients :

1.6kg whole chicken
1 litre (4 cups) water
1 cup (250mls) light soy sauce
plus 1/3 cup (80mls) extra
1 cup (250mls) Chinese cooking wine
1/3 cu (75g) white sugar
5cm (2inch/25g) piece of fresh ginger,
- thinly sliced
4 cloves garlic, halved plus 2 cloves extra,
- cut in to matchsticks
2 star anise
2 cinnamon sticks
2 teaspoons sesame oil
2.5cm (1 inch/15g) piece of fresh ginger cut into matchsticks
2 fresh long red chillies, Sliced thinly
1/3 cup (80mls) peanut oil
4 spring onions
½ cup loosely packed fresh coriander

Cooking Steps :

Trim fat from chicken and place in the slow cooker. Add water, sauce, wine, sugar, ginger, garlic, star anise and cinnamon to the slow cooker
Cook covered on low for 6 hours. Discard the poaching liquid

to serve:

2 teaspoons sesame oil

2.5cm (1 inch/15g) piece of fresh ginger cut into matchsticks

2 fresh long red chillies, Sliced thinly

1/3 cup (80mls) peanut oil

4 spring onions

½ cup loosely packed fresh coriander

Cut chicken into 12 (Chinese style). Place on a platter, drizzle extra sauce and sesame oil over chicken. Sprinkle with garlic and ginger matchsticks and the chilli
Heat the oil until very hot and drizzle over chicken. Top with sping onion and coriander
