Rice Paper Rolls with two dipping sauces
fresh veggies - bean sprouts, carrots, lettuce, mint, cucumber, avocado
shredded BBQ chicken
ABC sweet soy sauce, sweet chilli sauce, lime juice,
Hoisin sauce, crunchy peanut butter
Chop veggies in 4cm lengths and place in piles along with shredded chicken.
Soak 1 rice paper at a time in warm water until soft, usually a few seconds.
Fill rice paper with each of the veggies and add shredded chicken, then roll - tucking in edges as you go.
Sauce 1 - mix 2 tbs of sweet chilli sauce, 1 tbs of ABC sweet soy sauce, 1 tbs fresh lime juice.
Sauce 2 - mix 2 tbs hoisin sauce, 1 tbs crunchy peanut butter (or quantities to your taste!).
