Sweet gentle curry with a tang.

Cuisine :

Thai

Ingredients :

500 gm chicken thai sliced
1 can of Coconut Cream
1 Tbspn Valcom Massaman Paste
1 1/2 cups chopped pumpkin
1 1/2 cups chopped sweet potato
1/2 red capsicum sliced
garnish
* thai basil leaves
* dried chilli flakes
* crushed peanuts
* 1/4 lime to squeeze on curry

Cooking Steps :

Pour the can of coconut cream in pan and slightly simmer, add Massaman paste and stir for a couple of minutes. Add chicken cook for a few minutes on low, then add the pumpkin and sweet potato cook covered on low for 10-15 minutes. Add the sliced capsicum for a few minutes (not to let it go soft) then serve with Jasmine rice and garnish with crushed nuts, chilli, thai basil and a 1/4 slice of lime.
