Hot, delicious, fragrant, Malaysian Laksa

Cuisine :

Malaysian

Ingredients :

Chicken thigh fillets, chicken stock, light coconut milk, tin of water chestnuts, jar of Laksa paste, bag of fresh bean sprouts, fresh snow peas, fresh hot chillies chopped, fresh garlic finely chopped, udon noodles

Cooking Steps :

1. Heat jar of laksa paste in large saucepan with finely chopped garlic and chillies to taste
2. Dice chicken thigh fillets (at least one per person) and fry in paste, gradually adding chicken stock, simmering until cooked
3. Add water chestnuts, snow peas and coriander stems very finely chopped
4. Microwave 2 packs of fresh udon noodles for 2 mins and place in 4 large bowls with a handful of fresh bean sprouts in each bowl
5. Spoon soup into each bowl and place coriander leaves on top
