Lao charcoal chicken. Serves 2
6 chicken drumsticks (or 2 x Marylands, 1/2 chicken, as you desire)
4 tbsp Coriander root
4 cloves garlic
4 birds eye chilis (more or less as you like)
1 tbsp fish sauce
4 tbsp soy sauce
1 tbsp palm sugar
3 tsp galangal
4 tsp lemon grass
Chop all dry ingredients roughly, add wet ingredients, blend all ingredients in a food processor (or pound to a paste with mortar and pestle).
Marinade chicken over-night, then grill on charcoal cooker, BBQ, or in a kettle style BBQ. Try to cook over charcoal as it seals in the juices and adds amazing flavour.
Serve with rice, salad and sweet chilli dipping sauce.
