Lamb with Red Curry Sauce

A simple fragrant curry simmered in coconut milk

Cuisine :

Thai

Ingredients :

1 cup coconut cream
2 cups coconut milk
2 tbs red curry paste
1 kg lamb pieces (cubed)
2 lime leaves
1 tsp salt
2 tbs fish sauce
1 red chilli

Cooking Steps :

1. Heat coconut cream in large saucepan and reduce until thickened
2. Add curry paste and stir until separates
3. Add lamb, coconut milk, lime leaves, salt, fish sauce and chilli, then stir
4. Simmer until lamb is tender, adding more coconut milk or water if required
5. Serve with rice and garnish with coriander leaf
