Beef broth served with noodles, pork and mushrooms
2kg beef bones
Korean doenjang paste
Korean hot pepper paste
Place bones in a large, deep pan, cover with plenty of water, boil bones for at least 10hours, topping water up whilst boiling.
Leave overnight in fridge. Remove fat before boiling again, boil again for 4 hours, you are now looking for the broth to reduce. After 4 hours, you should have pan about 1/2 full, strain, removing bones, leave meat, add onions, carrots, ginger, garlic, gently simmer for 1 hour, strain vegetables and meat, add Korean doenjang paste,
Korean hot pepper paste and soy, simmer for 1\2 hour, add mushrooms for last 5mins. To plate, place fresh cooked noodles in bowl, add thin slices pork fillet, pour over broth and mushrooms, garnish with boiled egg, sprouts, shallots, chilli and sesame oil.
