Prawn curry with eggplant, ginger and zucchini

Squid Brand Fish Sauce
1. Grate garlic and ginger and fry gently in sesame oil.
2. Slice eggplant and zucchini, add to pan.
3. Add 3 heaped tablespoons of red curry paste to the pan and allow to cook off.
4. Add coconut cream and simmer.
5. Add in prawns.
6. Season with fish sauce, lime juice and palm sugar, if liked.
7. Serve with steamed rice and enjoy!
