Tasty and easy, great for dinner parties.
Chicken thigh with skin on
Squid fish sauce - 1 teaspoon (per piece)
Shallots finely sliced -2 tablespoons (per piece)
White pepper- ground.1/2 teaspoon (per piece)
Kaffir lime leaves ,2, finely sliced (per piece)
ABC soy sauce
Mix pepper, fish sauce, shallots, lime leaves and chicken.
Marinade for an hour or two.
Pre heat oven to 180 c.
Roll chicken up and have the skin on the outside tucking the edges under.
Drizzle skin with ABC soy.
Cook for 20 minutes, more for increased number. Test if not sure to make juices run clear.
To finish, place chicken under the grill to brown and crisp up the skin.
