Fresh summer salad using Qld pork & aloe jelly

Cuisine :


Ingredients :

250ml Yoosh aloe Vera drink
1 tablespoon gelatine
Roast pork shredded 100g per person
Wombok cabbage 1/4
Red cabbage 1/4
Handful snow peas
Capsicum 1 (red or yellow)
Coriander 1 bunch
Mung beans crunch combo 1 cup
Carrot 1
Cobram oil 1/4
Squid brand fish sauce 1 teaspoon
Lee Kum Kee Sichuan Spice and chilli 4 teaspoons
Abc sweet soy sauce
1 lime
1 packet of glass noodles

Cooking Steps :

Jelly (make day before or earlier)
In square container
250mls Yoosh Aloe Vera pour into container
1 tablespoon gelatine mix in cup of boiling water mix and add to Aloe Vera. Mix together and place in coldest part of fridge to set
Rub pork roast with salt and pepper. Bake, BBQ or spit roast
We chose to spit roast on 3 burner Bbq
Cook 4 hours we added coriander and oil to the strings on the outside
Once cooked we pulled off and hand shredded pork into a bowl
In bowl
Cut finally 1/4 womboke and red cabbage add to bowl
Cut into strips 1 red or yellow capsicum add to bowl
Rip 6 stems of coriander into salad
Peal into strips 1 carrot into salad
Add 1 cup of crunch combo beans
Mix salad
Salad dressing
1/4 cup of Cobram olive oil
Add teaspoon of fish sauce
Add 4 teaspoons of Lee Kum Kee Sichuan Spice and chilli
Add 10 stems of coriander chopped
Add 3 shots of ABC Sweet Soy sauce
Mix salad dressing together with salad
Glass noodles (optional)
In bowl add glass noodles and boiling water
Once ready drain and add to salad mix
Build meal
In bowl
1. Place salad in bowl
2. On top add shredded homestyle pork
3. Cube jelly and sprinkle round bowl
4. Garnish with a swell of sweet soy sauce, lime and coriander or mint
