Green Papaya Salad, fresh crab, Nuoc Cham Dressing

Amazing textured salad – sweet, sour, salty, hot

Ingredients :

Salad
2 cups of julienned green papaya
120 grams freshly picked crab meat
10 mint leaves
10 basil leaves
10 coriander sprigs
1-2 tablespoons crushed toasted peanuts, unsalted
a sprinkling of fried shallots
2-3 tablespoons of Nuoc Cham, recipe follows

Nuoc Cham dressing
50ml Squid Brand Fish Sauce
50ml rice vinegar
1-2 teaspoons raw sugar
60ml warm water
1 garlic clove
2 birdseye chillies
juice of 1 lime, approx. 1 tablespoon
pinch of sea salt flakes

Cooking Steps :

For the dressing
Peel and roughly chop the garlic, slice the chilli. Place the garlic and chilli into a pestle and mortar with a pinch of sea salt. Pound to a paste. Add sugar, then add warm water. Mix at this stage to allow the water to dissolve the sugar. Add Squid Brand Fish Sauce, vinegar and lime juice, stir. Taste, add more Squid Brand Fish Sauce, lime or vinegar depending on personal taste. Final result will be a nice balance of salty, sweet, sour and hot. Put aside and now prepare the salad.

For the salad
Place julienned green papaya into cold water to enhance the crispness, gather the other ingredients. Drain the green papaya, mix in a bowl with herbs and 1 to 2 tablespoons of pre prepared Nuoc Cham dressing. Place the salad on a plate, then sprinkle over the peanuts, fried shallots and finally the crab. Enjoy.
