A healthy and refreshing green mango salad
3 bird eye chillies, finely chopped
2 tablespoons dried shrimp, soaked in warm water to soften, drained
2 tablespoons Squid brand fish sauce
2 tablespoons caster sugar
1 green mango, peeled and shredded
2 carrots, peeled and shredded
10 cherry tomatoes, cut in halves
1/4 cup Cashew nuts, coarsely chopped
1. Combine the fish sauce and sugar in a small bowl and mix well. Stir in the chopped chillies.
2. In a large bowl combine the shredded green mango, carrots, cherry tomatoes, dried shrimp, fish sauce and sugar syrup.
3. Serve sprinkled with chopped cashew nuts.
Note: Serves 2 as main or 4 as a side dish.
