Mango Papya Chia Pudding with Gojiberry
400ml coconut cream
2 tbsp chia seeds
2 tbsp dried gojiberry
1 tbsp honey
1 tbsp hot water
Vietnamese mint as garnish
Step1. Blend 200 ml of coconut cream with 120g of mango flesh until smooth. Add 1 tbsp chia seeds to create the mango chia pudding layer. Set aside & refrigerate for at least 4 hours or overnight.
Step 2. Repeat Step 1 with papaya flesh to create the papaya chia pudding layer.
Step 3. Soak dried gojiberry with honey and hot water and let it set for at least half an hour to reconstitute the gojiberry.
Step 4. Cut the remaining mango and papaya flesh into cubes.
Step 5. Spoon the papaya chia pudding to a glass container & then top it with a layer of papaya flesh.
Step 6. Repeat with mango chia pudding and mango flesh.
Step 7. End it with the papaya chia pudding.
Step 8. Top it with a mixture mango and papaya with the gojiberry.
Step 9. Garnish with Vietnamese mint.
