Curry pumpkin served on brown rice

Ingredients :

2 tbs Red curry paste
2 cups Brown rice cooked
2 medium Onion
1 piece crushed Garlic
1/2 Butternut pumpkin
2 potatos
1 small Red capsicum
1 small bunch Spinach
1 can Coconut milk
4 Medjool dates chopped

Cooking Steps :

Fry oil and curry paste in pan until fragrant
Add garlic and onion and cook for 3 min
Add pumpkin, potato, dates and coconut milk, allow to cook until pumpkin and potato soft
Add capsicum and cook for a further 3-4 min before adding spinach.
Season with salt snd pepper and serve with brown rice
