Creamy Coconut Chicken & Asian Vegetable Laksa
Thick Rice Noodles
In a medium saucepan add 1 litre of water, two tablespoons of crushed garlic & coriander roots and bring to the boil add chicken and poach until it pulls apart easily.
Remove chicken and shred. Keep the stock.
Add one tablespoon of oil to a hot wok, add a jar of Laksa paste, fry until the oil from the paste comes out. Pour in one can of coconut milk & add vegetables as well as chicken. Simmer for 10-15 mins
In the saucepan of stock add one packet of rice noodles. When ready add to the wok. Toss though sauce, vegetables and chicken.
Place in bowl and add sesame seed & coriander.
