Lemongrass, fish sauce, soy sauce, ginger, garlic, chilli, lime, lime zest, capsicum, spring onions, chicken drumsticks flayed, coriander, mint, basil, brown sugar.
Coconut milk is the very best tenderising ingredient for chicken. I marinate the chicken drumsticks overnight in a can of coconut milk in a zip lock bag.
Saute garlic, ginger, spring onion, capsicum and lemongrass and chilli.
Add other wet ingredients.
Add chopped herbs.
Mix all the above and add chicken drumsticks. Marinate additional 4hrs.
Slow cook for 5hrs on 110 degrees in fan forced oven.
Add cornflour to thicken.
Prior to serving add coriander leaves and fried spring onions to garnish.
Serve with Basmati Rice.
