Chicken soba noodle salad

Chicken soba noodle salad

Deliciously healthy and easy asian chicken salad.

Ingredients :

1 punnet cherry tomatoes, halved
1 tbsp kecap manus
2 tbsp soy sauce
1 tbsp peanut oil
1 tbsp rice wine vinegar
1/2 tbsp mirin
1 garlic glove, finely chopped
1/2 tsp finely chopped ginger
1 tsp honey
1/2 tsp sesame oil
squeeze fresh lemon juice
1 chicken breast, thickly sliced
200g soba noodles
1 carrot finely sliced
1 cup finely sliced snow peas
1/2 cup capsicum finely sliced
1/2 cup coriander leaves
1/2 cup mint leaves
2 spring onions finely sliced
4 eggs
4 pinches of salt
1 chilli finely sliced
1 tbsp toasted sesame seeds

Cooking Steps :

Drizzle tomatoes cut side up with kecap manis and roast for 20 minutes in hot oven.
Combine dressing ingredients of soy sauce, oil, vinegar, mirin, garlic, ginger, honey, sesame oil and lemon juice.
Take 1 tbsp of dressing and marinate chicken for 10 minutes.
Cook the soba noodles in boiling water for 4 mins, drain.
Toss noodles, carrot, snow peas, capsicum, onions, coriander and mint with dressing in large bowl.
Cook chicken in hot pan over med high heat for 3 minutes each side or until cooked through, slice.
Mix one egg with 1 tsp water, 1 tsp sliced chilli and a pinch of salt, pour in a thin layer in hot flat pan over med high heat, cook for one minute and transfer to serving plate
Repeat with the other eggs to have four serves.
Top omelettes with noodle salad, chicken, roast tomatoes and sprinkle with sesame seeds.
