Chicken Laksa

Delicious Laksa soup with chicken and veggies

Cuisine :

Malaysian

Ingredients :

Valcom laksa paste
TCC Light coconut Milk
Spring onion
Diced zucchini
Chopped pak choy
Diced chicken breast
Lime juice
Fresh chilli
Rice vermicelli
Coriander

Cooking Steps :

Fry paste until fragrant. Add chicken and seal, then add spring onion , zucchini and pak choy stalks, fry one minute. Add coconut milk, some hot water and lime juice, bring to simmer until chicken cooked. Add remaining pak choy, stir through. Meanwhile boil water for vermicelli, pour water over vermicelli in bowl, drain after 2 mins. Serve noodles in bowls top with laksa soup, spring onion, coriander and chilli to taste. Enjoy!
