Vietnamese noodle salad with coconut dressing

Cuisine :

Vietnamese

Ingredients :

Buckwheat soba noodles (270g)
Chicken thigh fillets (300g)
Red cabbage (half)
1 Fennel
1 Cucumber
4 Carrot
Coriander (cup)
Basil (cup)
Mint (cup)
Shallots (cup)
DRESSING
Coconut milk 400ml
1 Lime
Fish sauce (2 tablespoon)
Raw sugar (2 teaspoon)

Cooking Steps :

Preheat oven 180 degrees celcius, season whole chicken fillets and lay flat, roast until golden. Boil soba noodles for 4 minutes. In a large bowl; shred cabbage, carrots, cucumber. Slice shallots and fresh herbs. In a small bowl add coconut milk and lime juice, fish sauce and sugar. Slice chicken into strips and add to salad with noodles. Add dressing and toss salad to finish.
