2 tablespoons oil
3 tablespoons curry powder
1 large onion, diced
3 cloves garlic, mashed
1 can coconut milk
2 cups water or chicken stock
2 tomatoes, diced
2 medium potatoes, peeled and cut into bite-sized chunks
salt and pepper, to taste
1 tbsp sweet soya sauce
1 teaspoon sugar
4 boneless skinless chicken thighs
salt and white pepper (black pepper may be substituted)
Heat the oil and add the curry powder then add the onion and stir fry until soften.
add chicken and garlic and fry for 10 minutes then add the potato and tomato.
cook for further 5 minutes and add coconut milk and water or chicken stock and let it boil.
add the sugar,soya sauce,salt and pepper and cook for 10-15 minutes on slow heat or until the potato cooked through.
make desired gravy,garnish with coriander and serve with boil rice.
