Chicken and Coconut Milk Noodle Soup

Delicious and healthy weight watchers soup.

Cuisine :

Thai

Ingredients :

1 400g packet of hokkien style noodles
Fresh veggies of your choice ie broccoli, beans, carrots etc
1/3 cup (100g) Thai red curry paste
2 cups (500ml) TCC Coconut Milk
400g chicken breast fillets, thinly sliced
1 tbs Squid Brand fish sauce

Cooking Steps :

Prepare noodles according to packet.
Chop veggies into 3cm chunky pieces.
Place red curry paste in a saucepan over medium heat and stir until fragrant (about 2 mins).
Add TCC coconut milk and 3 cups (750ml) of water and bring to boil.
Add chicken and veggies, reduce heat and simmer uncovered until chicken is just cooked through.
Add noodles and Squid Brand fish sauce and simmer for 1 minute or until heated through.
Serve.
Enjoy.
