Chicken and brocollini green curry

Green curry served with brown rice vermicelli

Ingredients :

Brown rice vermicelli
Peanut oil
1 Tbs green curry paste
2 Tbs fish sauce
1 Tbs coconut sugar
400ml coconut milk
2 C chicken stock
6 kaffir lime leaves
2 stalks lemongrass crushed
1kg chicken
500g btocollini
2 Tbs lime juice

Cooking Steps :

Put oil in pan and fry curry paste for one minute. Add fish sauce, coconut milk, sugar, stock, lime leaves and lemon grass and bring to the boil. Add chicken and reduce heat to a simmer and cook for 10-15 mins until chicken is cooked. Add brocollini and cook for a further 2 mins. Cook noodles according to instructions on packet and separate into serving bowls. Pour curry over the top.
