Chi-Thai BBQ Pork Ribs with Sesame Slaw

BBQ Pork Ribs, Sesame Slaw & Crispy Wonton Strips

Ingredients :


BBQ Ribs
2 large Pork Rib Racks
2tsp Ginger – finely grated
2 Kaffir Lime Leaves – finely chopped
2 stalks Lemongrass – finely chopped
4 Tbs Lee Kum Kee Chilli Garlic Sauce
4 Tbs Lee Kum Kee Hoisin Sauce

Asian Slaw
1 Cup Wombok – shredded
1 Cup Red Cabbage – shredded
2 Spring Onions – sliced
1 large Carrot – thinly julienned
½ Cup Bean Shoots
1 Chilli – deseeded & sliced

Dressing
1 Tbs Yeo's Sesame Oil
2 Tbs Rice Wine Vinegar
2 tsp Sugar
1 tsp Ginger – finely grated
2tsp Lee Kum Kee Premium Soy Sauce
1 tsp Lime Juice

Crispy Wonton Strips
1 pkt Wonton Wrappers
Oil to fry

Cooking Steps :

BBQ Pork Ribs

Mix ginger, kaffir lime and lemongrass, rub into racks and allow to marinate overnight.
Preheat oven to 180 C / 160 C (fan-forced)
Mix chilli garlic and hoisin sauces and coat both sides of the racks.
Bake for 60 minutes, turning once during cooking, coat with extra sauce if needed.

Asian Slaw

Mix all ingredients, toss with dressing just before serving.

Crispy Wonton Strips

Cut wonton wrappers into slices (½-1 cm wide), fry in hot oil until golden and crispy, drain, serve arranged on top of Asian Slaw
