Mild chicken thai meal infused with coconut milk
red curry paste
coconut milk/ cream
Prep all ingredients first ready to go.
fry chilli, garlic, leek and shallots for about 3-5 minutes.
add curry paste and fry off for 2 minutes.
add chicken and carrot and cook until chicken is cooked through.
mix stock, lime juice, fish sauce and palm sugar together. Add to pan. Add coconut milk/ cream.
stir through. Simmer until it thickens slightly. Cook noodle and add them to pan. Stir through and simmer again.
serve with some chopped shallots and crunchy noodles
