Authentic crispy aromatic Asian duck made simply!
1 x whole duck (approx 1.5kgs)
2Tbs cooking oil of your choice
2Tbs Chinese Five Spice
2Tbs hoisin sauce
1tsp fish sauce
2 x spring onions
2 x slices of ginger
Salt and pepper to taste
1) Preheat the oven to 200oC. Meanwhile pat the duck thoroughly with paper towels and slice the skin with crossing diagonal lines. This helps to render the fat and crisp up the skin during the cooking process, plus it also makes it look fancier!
2) Next mix together in two separate jugs- 1) the cooking oil, 1Tbs of the Chinese five spice, salt and pepper, 2) the remaining Chinese five spice, hoisin and fish sauce and water.
3) Coat the duck in the first mixture, making sure it's massaged into the cracks etc, then stuff its cavity with the spring onions and sliced ginger.
4) Bake for 40mins/kg of meat, basting the duck with the second mixture a few times in the last 20mins of cooking.... Enjoy!
