To help us decide the lucky winners, and be the best judge of your fantastic efforts, we are thrilled to have on board Leslie Chan, celebrated chef and Vice President of the Australian Culinary Federation – Victorian Chapter.
Leslie has been part of the hospitality industry for more than 25 years. He began his career in Hong Kong, where he worked as a chef, and now, with all his recent work in Australia, he seeks to blur the divide between Western and Eastern cooking.
His interest in the culinary sciences led Leslie to pursue and complete a diploma of hospitality at Holmesglen Institute of TAFE, succeeded by a business degree in Hospitality and Tourism Management at Latrobe University at Melbourne. Soon after his stint in Australia, Leslie returned to Hong Kong, where he worked at Hong Kong Disneyland Resort, before deciding to make the permanent shift to Australia.
Leslie teaches a range of cookery courses including Asian Cookery, Commercial Cookery, Apprentice and ADF – Australian Defence Force. He won the 2012 Outstanding Staff Award (Teaching and Educational Excellence) at Holmesglen Tafe. He is also the recipient of several other prestigious International and National awards, and his trophy shelf boasts of Gold Medals from the Australian Culinary Challenge for Four consecutive years – 2010, 2011, 2012 and 2014.
This talented chef splits his time between Hong Kong and Australia, participating in many festivals and competitions along the way. He is also a coach and mentor for students, many of whom have received very successful results.
