Yin choy is a significant equatorial vegetable that is common to the American, African and Asian tropics. It is available in summer in southern states and all year round in warmer areas. Yin choy, or Chinese spinach is known to be high in vitamin A content, and can be eaten raw in salads. Remember to wash it thoroughly and cut off the roots and bottom section of the stem before consuming. Yin choy can also be briefly steamed and served with seafood, simmered in a soup or used as a filling for pastries. This green is best stored in an open plastic bag for a couple of days in the coldest part of your refrigerator.
